Lemon Sugar Cookies

  • 2¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 ounces cream cheese, softened
  • 1¼ cups granulated sugar (plus ¼ cup for rolling)
  • 1½ teaspoons vanilla extract
  • 2 tablespoons fresh lemon juice
  • Zest of 1 lemon
  • 1 large egg

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
  3. In a large bowl, beat the butter, cream cheese, and 1¼ cups sugar until fluffy.
  4. Add the egg, vanilla extract, lemon juice, and lemon zest. Mix until well combined.
  5. Gradually add the dry ingredients and stir just until the dough forms.
  6. Scoop dough into tablespoon-sized balls, then roll in the reserved ¼ cup sugar.
  7. Place on baking sheet and flatten slightly.
  8. Bake for 10–12 minutes until the edges are set and the bottoms are lightly golden.
  9. Let cool for 5 minutes before transferring to a rack.
