These fluffy, protein-packed cottage cheese egg bites are the perfect meal prep breakfast! Easy to make, low-carb, and customizable with your favorite add-ins.

  • 9 large eggs
  • ¾ cup cottage cheese (low-fat or full-fat)
  • ½ teaspoon salt
  • Freshly ground black pepper to taste
  • Optional Add-ins:
    • ½ cup shredded cheese (cheddar, mozzarella, feta, goat cheese)
    • 1 cup chopped spinach
    • ½ cup cooked veggies (mushrooms, bell peppers, tomatoes)
    • ⅓ cup fresh herbs (basil, chives, parsley)
    • ½ cup cooked bacon, ham, or turkey

Instructions

  • Preheat the oven to 350°F (175°C).
  • Prepare a muffin tin by lining with silicone muffin liners or lightly greasing with oil.
  • Blend eggs, cottage cheese, salt, and pepper in a blender until smooth (about 15-20 seconds).
  • Pour the egg mixture evenly into the prepared muffin tin.
  • Add any mix-ins (cheese, veggies, meats) on top and use a fork to gently stir them in.
  • Bake for 22-25 minutes, or until set in the center and slightly golden on top.
  • Let cool for 5 minutes before removing from the muffin tin.
  • Enjoy immediately or store for meal prep!

Notes

  • For extra fluffiness, blend the egg mixture before baking.
  • Use full-fat cottage cheese for a creamier texture.
  • If adding cheese, reduce salt to ¼ teaspoon to prevent it from being too salty.
