- ¾ cup cottage cheese (low-fat or full-fat)
- ½ teaspoon salt
- Freshly ground black pepper to taste
- Optional Add-ins:
- ½ cup shredded cheese (cheddar, mozzarella, feta, goat cheese)
- 1 cup chopped spinach
- ½ cup cooked veggies (mushrooms, bell peppers, tomatoes)
- ⅓ cup fresh herbs (basil, chives, parsley)
- ½ cup cooked bacon, ham, or turkey
- Preheat the oven to 350°F (175°C).
- Prepare a muffin tin by lining with silicone muffin liners or lightly greasing with oil.
- Blend eggs, cottage cheese, salt, and pepper in a blender until smooth (about 15-20 seconds).
- Pour the egg mixture evenly into the prepared muffin tin.
- Add any mix-ins (cheese, veggies, meats) on top and use a fork to gently stir them in.
- Bake for 22-25 minutes, or until set in the center and slightly golden on top.
- Let cool for 5 minutes before removing from the muffin tin.
