Instructions

Step 1: Preheat & Prep

  1. Preheat oven to 375°F (190°C).
  2. Lightly grease a loaf pan or line it with parchment paper.

Step 2: Mix Ingredients

  1. In a large bowl, combine ground beef and Mexican chorizo.
  2. Add eggs, breadcrumbs, onions, and minced garlic.
  3. Stir in chipotles in adobo for a smoky, spicy kick.
  4. Season with salt and pepper, mixing gently to avoid overworking the meat.

Step 3: Shape & Bake

  1. Shape the mixture into a compact loaf and place in the loaf pan.
  2. Bake for 45-50 minutes until golden brown and cooked through.
  3. Check internal temperature – it should reach 160°F (71°C) for safety.

Step 4: Rest & Serve

  1. Let the meatloaf rest for 10 minutes before slicing.
